
Serves 4 to 6
This soup is so easy to make that anyone can put it together in minutes.
Ingredients: 1 can, 16 oz. low sodium chicken broth; about 4 large leaves of collard green together with stems washed and sliced 1/3-inch wide; 1 cup fresh chopped onion; 1Tbsp. chopped fresh garlic; 1 large bell pepper cored and cut into 1-1/2-inch pieces; 1 can 8oz. plain tomato sauce; 3 to 4 cups cooked turkey (or buy 1 pound boneless turkey breast, cut in 1-1/2-inch cubes and simmer in the chicken broth for 15 minutes until they are tender); 1/3 Tsp. turmeric powder (op); salt and pepper to taste; 1Tsp. fresh rosemary chopped or ¼- tsp. dry.
In a large pot (about 5Qt.) bring the chicken broth to a boil, add collard green, onion, garlic, and cook for 20 minutes or until they are soft. Add red bell pepper, tomato sauce, turmeric, cooked turkey, rosemary and simmer for 10 minutes. Add salt and pepper, serve warm with garlic bread or whole wheat toasts.
