(Makes about 3 cups)
We grew up on fresh herb chutney. Fresh herbs with lemon not only taste good but they are loaded with nutrients. They keep your immune system healthy and your brain healthy. Greens in general are good for your brain, eyes, skin, and they keep diseases away.
Ingredients: 1-1/2 cup chopped green onion (scallion); 4 cloves of garlic peeled and chopped; 2 large lemons peeled deep with skin and white pith out, then sliced, seeded, and cut into quarters; 3 cups packed fresh cilantro/flat leaf parsley leaves and stems chopped; 1 cup fresh mint leaves; 2-inch piece (1/4c) soft ginger grated with skin on; 1 cup chopped walnuts; about 1 cup water; 1/2Tsp. turmeric powder; salt and pepper to taste.
In a blender add 1/2 cup water, onion, garlic, and ginger, lemon and puree well. Add rest of the water, cilantro/parsley, and mint pulse a few times then puree coarsely. Now add the walnut pulse first, and puree again. Take the chutney out in a medium bowl and whisk in turmeric, salt and pepper to taste. Keep covered in the refrigerator until needed. Use with meals all day long.
