These chocolate squares are very easy to make. You can use all fruits or all nuts, as you prefer. Just make sure you use good chocolate.
Ingredients: 4 tbsps. butter; 1 bar, 4 oz. (113g) unsweetened chocolate premium baking bar with 100% cacao and 1 bar, 4oz. (113g) semisweet chocolate (I prefer Ghirardelli) chopped fine; 2Tbsp. unsweetened cocoa powder; 1/2Tsp. instant coffee; 2Tbsp. dark chocolate liqueur; 1 cup glazed pineapple chunks.
Line a 8X8X2-inches pan with parchment paper and set it aside.
Heat a medium pot half full of water. Bring the water to a boil. Place the chopped chocolate, butter, instant coffee, cocoa powder and chocolate liqueur in a large glass bowl that can sit over the boiling water pot. Place the bowl and heat the chocolate for 5 minutes over the boiling water. When chocolate starts melting whisk it continuously until chocolate is just melted. Do not over whisk. Now pour the melted chocolate in the prepared pan and spread it out evenly with a butter knife. Sprinkle pineapple chunks on the top and set it aside to cool and firm.
After 2 hrs. or when chocolate is firm, take out the parchment paper together with chocolate, place it on a cutting board. Using a chef’s knife cut it into desired squares. Serve or store in the room temperature, in a jar.
White Chocolate Squares:
Follow the above method and use 3 bars, 4 0z. (113g) each, white chocolate and 1/4 cup white chocolate liquor. If you prefer you can sprinkle dry cranberries and roasted pistachios or just make them without any fruits or nuts.
